Simple Moroccan-Inspired Salad

I’ve noticed throughout my travels, that every country I’ve been to has a different definition of the word ‘salad’, and it is never what we imagine a salad to be in the US. I love it! I learned how to make this when visiting family in Morocco. It’s PACKED with flavor, and is only 5 ingredients!!

What You’ll Need:

-1 small eggplant, peeled & chopped

-2 large tomatoes, peeled & chopped

-olive oil

-cumin

-paprika

Put the eggplant in a large pan on medium heat with olive oil, and spices. Cook under eggplant becomes tender, then add the tomatoes (with any juice runoff). Let everything cook together for 1-2 minutes, stirring occasionally. Once the tomatoes start to become more tender, mash them with the eggplant with the back of your spoon. Do this until it forms a nice mushy mixture. Add parsley, if you so please (I recommend!), and enjoy! Buon appetito.
