Cucumber Salad

The salad I eat allllll summer long.

What You’ll Need:
-1 cucumber, peeled

-1 tomato, chopped

-1/4 red onion, chopped

-fresh parsley, chopped

-Ligurian olive oil

-salt qb

Preparation:

Cut the cucumber in half vertically. Remove the seeds with a spoon. Slice each half vertically again, then chop in quarters. Mix in a large bowl with tomato, onions, parsley, oil, and salt. Buon appetito!
