Grilled Squid

Squid is really easy to overcook. The cook time varies on the size, and heat of the grill you’re using, but once they’re no longer transparent, you know they’re done.

What You’ll Need:

  • FRESH squid

  • lemon juice

  • olive oil

  • parsley

Preparation:

Cleaning the squid is really important. Wearing cloves, cut above the eyes to detach the mantle. Slice the mantle lengthwise to clean out the liver and stomach. Run under cold water to remove excess ink, if necessary. Remove the eye, and carefully remove the beak by poking your thumb though the center of the tentacles from the top down.

Lightly dress with olive oil. Grill for about 4 minutes or until cooked. Squeeze fresh lemon juice and sprinkle fresh parsley over cooked squid. Buon appetito!
