Farro Escarole Soup


My mom used to always make “Garbage Soup” growing up. It was a soup of, basically, whatever we had left in the fridge that we needed to eat before it went bad. As you all may know, I used to be the pickiest eater. But this soup was always my favorite. Of course I would never admit to my mom at the time that I actually loved it…so mom, this one’s for you.

What You’ll Need:

-2 cups of garbage broth

-100g Italian pearled farro

-1 bunch of escarole, Swiss chard, or spinach washed & chopped

-S&P qb


Pour your veggie broth into a medium-sized pot. If you put it in the freezer to conserve it, defrost it in the pot and add 1/2 cup water. Once the broth is boiling, add the farro. Cook for 6-8 minutes on low heat until the faro looks ‘bloomed’ and soft in texture. Stir in the escarole. Serve & enjoy!
