Spiced Wine Poached Pears

Spiced Wine Poached Pears with Olive Oil Thyme Whipped Mascarpone, drizzled with 50 year aged balsamic and amaretti cookies. It sounds waaaaay more complicated than it is, I promise ☺️ aside from the aged balsamic...that is a gift from a dear friend that I treasure deeply. Either way, I created this to taste like how I imagine the holidays. 

What You’ll Need:

(makes 4)

For the Pears:

  • 4 juicy pears

  • 4 cups dry red wine

  • 3-4 cinnamon sticks

  • star anise

  • orange slices

For the Mascarpone:

To Top:

  • QUALITY balsamic vinegar of Modena DOP

  • crushed amaretti cookies

Preparation:

Put all the ingredients for the pears in a large pot and let simmer for an hour or so until the pears are soft. In a bowl, whip all of the ingredients for the mascarpone with a fork until fluffy and creamy. Remove the pears from the liquid and let cool. Cut in half vertically and spoon out the seeds. Fill the center with the mascarpone mixture, top with amaretti, and drops of balsamic. Buon Appetito!!!
