Chocolate-Covered Almond Bites
These 4 ingredient bites have helped me steer clear of my morning cookie (for now). But they’re almost too good…I might have to consider them a long-term cookie replacement.
Simply blend 2-3 dates with 1 cup blanched (or not) almonds. Form as many bites as you’d like, in whichever size, and cover with cinnamon. Melt down some super dark chocolate (I use 100% cacao, but I know a lot of people can’t stand it), and pour it over the bites. Let set for an hour, or so. Store in the freezer or refrigerator.
