Sformato di Zucchine

I’m not sure why 2-step oven-baked savory dishes always seemed so overly complicated to me when I first started cooking. Things as simple and delightful as sformati have me wondering why I ever felt that way! Be it with potatoes, zucchine, cauliflower, anything…these little mounds of joy are as easy to make as they are to eat.

What You’ll Need:

(Makes 4)

  • 1 zucchina

  • 1 clove garlic

  • 100g *fresh* ricotta

  • 1 egg

  • s&p, qb

  • 1 hot peperoncino

Preparation:

Sformati can be made in muffin tins, ramekins, pie tins, anything you have! I made mine in silicon chocolate molds. Chop up the zucchina and sautee it with the garlic until golden brown. Add the cooked zucchina, garlic, ricotta, egg, salt, pepper, and peperoncino to a food processor or hand mixer. Scoop the mixture into your baking vessel and bake on 350 for 30 minutes, or until the tops turn golden brown. Buon appetito!
