Brown Rice Spring Rolls

This dish is a guaranteed crowd pleaser. Not only are they very easy to make, they are also incredibly DELICIOUS. The rolls shown in the photo were prepared in brown rice paper , but you can certainly use regular rice paper. This recipe is a base, but please be creative! I often jazz things up by including avocado, or shrimp.

What you'll need:

rice paper

romaine lettuce, chopped

carrots, chopped

cilantro, minced

chow mien noodles

For the Sauce:


hot sauce

Preparation: Fill a large boil with warm water. Soak one single sheet of rice paper in the warm water for at least 5 seconds, or until soft. Bring the rice paper onto a surface, and place your fillings in the center. Quickly fold the rice paper from right to left to cover the center. Next fold in the top of the rice paper, and the bottom into the center (like a burrito!!). Finally, carefully roll the center into the left side to create a perfectly enclosed roll. 

For the sauce:
Grab your favorite mayo and hot sauce and mix those beauties together to your desired taste. I use Veganaise and Valentina's Extra Hot , but you can also use a reduced-sodium soy sauce!
