Insalata con Parmigiano Reggiano DOP

Anyone who knows me knows very well how obsessed I am with Parmigiano Reggiano. I’m as in love with the cheese as I am informing people that Parmesan IS NOT Parmigiano Reggiano (video below explaining all). Parmesan is a low-quality insulting knock-off of the real cheese. I know Parmigiano Reggiano can get pricey in the US, but please please please don’t opt for low-quality ingredients to save a buck. It’s going to hurt your body and cause inflammation in the long-run. I’m also as passionate about quality balsamic! Balsamic Vinegar di Modena IGP is bullshi*t. If you see any colors, additives or caramels, do not buy it. Your balsamic vinegar does not have to be from Modena. It has to include only 1 ingredient, and one ingredient only: grapes (grape must). Also, it should never have an age written on it because there is, for real balsamico, no true way to know. It will have a colored label to guarantee the minimum years of aging: gold (over 25 years), silver (over 15 years), orange (over 12 years)

This salad is simple, but the ingredients are specific. To me, the flavors and health benefits are soooo worth it.

What You’ll Need:

  • arugula

  • shaved fresh Parmigiano Reggiano DOP

  • drops of aged balsamic

Preparation:

Shave fresh Parmigiano Reggiano DOP using a vegetable peeler, or cheese shaver. Mix ingredients in a bowl together and serve! Buon appetito :)
