The Gardener's Gazpacho

IMG_3847 2.JPG

With the surplus of tomatoes in the garden, I’ve been trying to think of ways to use them as much as possible, since I don’t have a lot of time for jarring! I remembered my first trip to Barcelona, where I was much less adventurous when trying new foods than I am now. My host mother made me some gazpacho, and I couldn’t get into the idea of cold soup. Not wanting to offend her, I ate it, but the end I loved it! This recipe was inspired by those memories, but made with the ingredients available to me here in Italy.

What You’ll Need:
-2 large tomatoes, peeled

-1/2 yellow onion

-1 peperoncino

-1/2 carrot, chopped

-1 small cucumber, peeled & chopped

-handful fresh basil

-handful fresh parsley

-pinch of paprika

-s&p qb

Preparation:

Throw it all in a blender. Blend. Pour into a bowl. Chow down :)

If you have more time, I highly recommend lightly sautéing the tomatoes with the herbs before blending. The flavor is unreal. Buon appetito!
