Bright & Spicy Parsley Sauce

This recipe was inspired by my recent trip to Cinque Terre. We indulged in a beautiful plate of seafood accompanied by a curious, fluffy green sauce served in a shallot shell. We eagerly tried it and immediately asked the nearest restaurant personnel, “what…is….in…this??” They delightfully told us, parsley, mayo, olive oil, and salt. So simple, and oh, so delicious. I decided to jazz it up, and take out the mayo so that our vegan friends can also be enchanted by this delicate sauce.

What You’ll Need:

  • bunch of parsley

  • 1/4 cup Ligurian olive oil

  • zest of 1 lemon

  • 1 clove garlic

  • 1 small hot pepper

  • S&P qb

Preparation:

Put all ingredients in a food processor & blend up! I love it with fish, but I’m confident it will be great with meat or on it’s own. I put it over my Farro-Stuffed Peppers and it was scrumptious!
